If you’re ever cut a whole watermelon up, you’ve probably noticed that your cutting board is full of watermelon juice, and once you’ve put the cut-up watermelon into containers, they’ll be full of juice too. But, even though you might want the watermelon most, don’t toss out the juice! There’s so much flavor in there that you can use to your advantage.
Mojito
Watermelon mojitos are so refreshing and go perfectly with those classic mojito flavors!
Ingredients
- 3 cups of watermelon juice
- 5 sprigs of mint
- 3/4 cup of rum
- 1/3 cup of lime juice
- 1/4 cup of simple syrup
- 1 bottle of sparkling water
Recipe
- Start by muddling the mint leaves and the simple syrup together in a large pitcher.
- Then, pour in the watermelon juice, the lime juice, and the rum and mix it all up.
- Top with the sparkling water and enjoy!
Salad Dressing
Fresh watermelon juice makes for a gorgeous dressing for watermelons salads, or regular leafy greens!
Ingredients
- 1/2 cup of watermelon juice
- 1/4 cup of honey
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of Dijon mustard
- 1/2 cup of olive oil
Ingredients
- Add all the ingredients to a blender except for the olive oil and blend.
- Then, slowly add in the olive oil to emulsify the dressing.
- Pour over your favorite salads!
