]]>To make the coconut shrimp you need 2 egg whites, 1 lb. peeled and deveined raw shrimp, 1 cup shredded coconut, 4 tablespoons tapioca starch, freshly ground black pepper, and sea salt.
For the mango sauce you should get 1 minced jalapeno, 1 cup chopped mango, 1/3 cup coconut milk, 1 teaspoon lime juice, 2-3 teaspoons raw honey.
Set the oven to 400 F degrees. Add a wire rack to your pan. You will need three bowls. Fill the first one with the tapioca starch and some salt and pepper. Add the egg whites to the second bowl. And include the shredded coconut to the third one. Place them all on a counter where you’ll do the dipping. Dip the shrimps’ first in the tapioca, then egg whites, and coconut in the end. Place them on the rack.
Bake them in the oven for 10 minutes per side. In the meantime, mix the lime juice, mango, jalapeno pepper, honey, and coconut milk. Blend them in a food processor or blender to get the sauce. Serve the coconut shrimp right away with the sauce on the side.
