Ube Infused Desserts Are the Latest Food Trend You Should Know About

If you haven’t heard of Ube before, that’s going to change in the next few months. This purple yam with instantly recognizable color is taking the world by storm, starting with our favorite desserts, including ice cream and donuts.

This species of yam hails from the Philippines, and it’s impossible to miss the desserts made with it thanks to their vivid purple shade. Ice cream, cookies, cupcakes, cakes and a wide variety of other pastries had been made with Ube for years, but they’ve just recently entered the US through Philippine cuisine.

Mildly sweet, nutty taste of Ube has been compared to sweet potatoes. It’s often confused with purple varieties of this tasty veggie because they’re similar in both color and taste, but purple yam has a much more gentle texture.

The main power of Ube is that it can make any dessert Instagram-worthy thanks to its distinctive purple color. Even those who’ve never heard of it want to give it a try after noticing how delicious it looks, and we can’t wait to see it overflow our Instagram feeds in 2020.

VEGAN UBE MAGNUMS via @theberrytraveller ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠ Ingredients for filling:⁠ 🌿 1/2 cup cashews, soaked overnight ⠀⠀⠀⠀⁠ 🌿 2/3 cup coconut cream ⠀⠀⠀⁠ 🌿 2 tbsp coconut yoghurt (or just add more coconut cream) ⠀⠀⠀⁠ 🌿 2 tbsp condensed coconut milk (I like @naturescharm – if you don’t have this just use rice malt syrup but I love the coconutty taste) ⠀⠀⠀⁠ 🌿 1 tsp coconut oil ⠀⠀⠀⁠ 🌿 1/4-1/2 tsp ube extract OR if you have access to frozen/fresh ube, replace 1/3 cup coconut cream with 1/3 cup mashed ube ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠ Ingredients for coating:⁠ 🌿 Vegan white chocolate ⠀⠀⠀⁠ 🌿 A few drops of ube extract ⠀⠀⁠ 🌿 1 tsp coconut oil ⠀⠀⁠ Optional: if your white choc is super sweet, use a bit of cacao butter to make it less so ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠ Method:⁠ 1. Blend filling ingredients until smooth (use a high powered blender for this!)⁠ 2. Pour into moulds and set in the freezer for a few hours or overnight⁠ 3. Melt vegan white chocolate and coconut oil, then add drops of ube extract⁠ 4. Remove magnums from moulds and coat in chocolate ⁠ 6.
