]]>To make the toasted ravioli you will need 3 large beaten eggs, 2 cups breadcrumbs, 3/4 to 1 pound small fresh ravioli, 1 teaspoon finely chopped fresh parsley, 1/2 cup grated parmesan cheese, 1 1/2 cups milk, 1 teaspoon finely chopped fresh rosemary, marinara sauce, vegetable oil, salt, and pepper.
First, get a large baking sheet where you’ll put the ravioli. Put them in the freezer and wait for half an hour until they freeze. While you’re waiting you can use a bowl to mix the eggs and milk. Use a second plate to mix the parsley, breadcrumbs, 1/2 teaspoon both salt and pepper and rosemary. Take the ravioli out of the freezer and start dipping them in the liquid mixture, then in the dry one. Place them again on the sheet and in the freezer for an extra 15 minutes.
Grab a skillet and heat the vegetable oil to 350 F degrees. Start frying the toasted ravioli for around 4 to 6 minutes. When they are done you can cover them with the parmesan and use the marinara as a side.
