The great thing about homemade pasta dough is that you can manipulate it into some many different designs. With hundreds of different shapes to make, a lot of people would think you need special equipment to achieve all of them. While that is true in some cases, a lot of shapes can be made at home using regular tools that everyone has in their kitchen.

Cencioni

For this flat disk pasta, all you need to do is to take a butter knife and cut a small piece of pasta from your long log. Then, smear the knife over it and stretch it a bit with your hand to create this design!

Cavatelli

To make this well-known pasta shape, all you do is cut even nuggets from the pasta log and roll them away from you with your fingers. That will give you the classic grove.

Lorighittas

To make this fun looking braided pasta, first, you need to roll out your pasta log much thinner. Then, pick it up and wrap it around your fingers a couple of times. Then, interlace the rings so they create the braided shape. This pasta comes from Sardinia and is normally served with a sausage ragu.
