These Fast Lemon Bars Are Ideal For Summer

These lemon bars are ready in 40 minutes and seem like the perfect treat for summer.

Ingredients:

1 cup all-purpose flour
1/2 cup butter at room temperature
1/4 cup powdered sugar
a dash of salt

For the lemon filling:
1 cup granulated sugar
zest of one large lemon
1/2 teaspoon baking powder
3 tablespoons fresh lemon juice
3 tablespoons all-purpose flour
2 large eggs

Instructions:

Set the oven to 350 F degrees. You will need a pan that is 8” to prepare the lemon bars. To prevent sticking, you can either add cooking spray or line it with baking paper.

The first thing you should do for the crust is to mix the powdered sugar with the butter. Use a mixer and mix until you’ve reached a creamy consistency. Start adding the salt and flour slowly. Use low speed to mix them. Once you get the crust, use pressure to place it on the pan. Leave it in the oven for 10 minutes.

In the meantime, you can make the lemon filling. Combine the sugar and lemon zest together. Include the flour, lemon juice, baking powder, and eggs. Stir the ingredients together and you can pour it on top of the crust.

Bake the lemon bars for 20 to 30 minutes. Wait for these delicious treats to cool down before you serve them. Top them off with powdered sugar.
