Making a cake in a cast iron skillet is so easy, gives it amazing flavor, and really couldn’t be easier.
Ingredients:
- 1/2 cup of unsalted butter
- 1 cup of packed brown sugar
- 2 cups of fresh fruit of your choice
- 1/2 cup of chopped pecans or any nuts of your choice
- 1/3 cup of orange juice, water, or milk
- 3 eggs separated
- 1 cup of white sugar
- 1 teaspoon of vanilla extract
- 1 cup of all purpose flour
- 1 teaspoon of baking powder
Instructions:
- Start by making the caramel sauce that will go on the top of the cake once you flip it.
- Melt the butter in the cast iron and then add brown sugar. Mix until it just starts to bubble over medium heat and then turn off the heat.
- Add in the fruit of your choice and then sprinkle on the nuts.
- Make the cake batter by whisking together the flour and baking powder, and then in a separate bowl, the yolks, white sugar, and the vanilla extract, until the yolks are pale yellow.
- Whip the egg whites until stiff peaks form and then fold that into the cake batter.
- Finally, pour the cake batter on top of the fruit and bake in a 375 F oven for 30-35 minutes.
- Wait for 10 minutes for the cake to cool, and then flip onto a cake stand and enjoy!
