This Cast Iron Upside Down Cake is Everything You Need For Dessert

Making a cake in a cast iron skillet is so easy, gives it amazing flavor, and really couldn’t be easier.

Ingredients:

  • 1/2 cup of unsalted butter
  • 1 cup of packed brown sugar
  • 2 cups of fresh fruit of your choice
  • 1/2 cup of chopped pecans or any nuts of your choice
  • 1/3 cup of orange juice, water, or milk
  • 3 eggs separated
  • 1 cup of white sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of all purpose flour
  • 1 teaspoon of baking powder

Instructions:

  1. Start by making the caramel sauce that will go on the top of the cake once you flip it.
  2. Melt the butter in the cast iron and then add brown sugar. Mix until it just starts to bubble over medium heat and then turn off the heat.
  3. Add in the fruit of your choice and then sprinkle on the nuts.
  4. Make the cake batter by whisking together the flour and baking powder, and then in a separate bowl, the yolks, white sugar, and the vanilla extract, until the yolks are pale yellow.
  5. Whip the egg whites until stiff peaks form and then fold that into the cake batter.
  6. Finally, pour the cake batter on top of the fruit and bake in a 375 F oven for 30-35 minutes.
  7. Wait for 10 minutes for the cake to cool, and then flip onto a cake stand and enjoy!
