If you have ever tried to cut into a baguette that has been in your pantry for a little too long and not found it to be the soft, luscious loaf it used to be, you are not alone. However, stale bread can be saved so easily and in a very delicious way by making it into croutons!  This recipe is so easy and can not only help amp up your cooking but also reduce your food waste in the process.

Recipe

  1. First, start off with any stale bread you have. That can be a ciabatta, baguette, sliced bread, anything that just is not amazing anymore.
  2. Then, cut the bread into cubes that are relative all the same size so they cook evenly.
  3. Put the bread on a baking sheet and drizzle over olive oil, salt, pepper, and whatever other seasonings you like. Some nice pairings are dried Italian herbs, paprika, or even cumin for a Latin-inspired salad.
  4. Then, put the bread into a 375 F oven for 5-10 minutes, until the bread has browned nicely.
  5. Allow them to cool, and then pair them with your favorite salads! You can also put them into soups to add crunch instead of dipping bread into it.

Whether you’re going away for a week or a month, it’s always a good idea to clean out your fridge before you leave. Making meals with only the ingredients you have in your fridge before you go on a trip will not only save you time by eliminating a trip to the grocery store, but money, and is even more eco-friendly.

So, if you need some help in this department, here’s what you need to know.

Base Ingredients

Stored properly, things like onions and garlic can actually last a while, maybe even the duration of your trip. So don’t feel like you need to use all of them before you leave, but when you do, make sure they’re in a cool, dark place, but not in the fridge!

Mixing and Matching

If you feel like you have a lot of produce but things that don’t really go together, here are some good ideas of how to use them up!

If you have lettuce and some root vegetables, roast them up and make it into a roasted veggie salad. Or, boil or roast everything, throw them into a blender, and make a fantastic and healthy soup! This is a great way to use up dairy products as well.

Whether you’re peeling an orange for a snack or trimming the tops of strawberries, there’s always food waste when it comes to fruit! If you want to utilize the whole fruit and get a real bang for your buck to make these DIY projects with fruit scraps.

Apple Jelly

Both the core and skin of an apple are edible, but they’re not to nice to bite into depending on what you’re cooking. But, instead of throwing them away, save them for an apple jelly! Boil the scraps in water, strain, add sugar and lemon juice and you’ll have an upgrade on your regular pb&j!

Chocolate Covered Citrus Peels

Citrus peels are completely edible, although if you bite into one right now it would be very bitter. But, if you blanch them in hot water the bitterness is really mellowed out, and then it’s the perfect vehicle for dipping into chocolate! Let the chocolate harden and you have a treat with a side of vitamin C!  

Fruit Scrap Sangria

Everyone loves sangria, and the best part is all the pieces of fruit you see! Instead of using fresh fruit, save your scraps and put that into a sangria! For red wine, apples, and citrus are unstoppable. For white wine, you can use anything lighter like kiwi skins, peach peels, or anything else you have lying around.

Food waste not only fills our landfills, but it also empties your wallet. So, if you want to make less waste and use all the food you buy during your shopping, find out where all of your produce should really be stored.

Potatoes

Potatoes are too sensitive to be put into the fridge, but they should always be in a dark place so that they don’t start sprouting. The best place to keep them is a drawer or cupboard that is nice and dark. Also, don’t leave them next to onions or they’ll go bad faster.

Onions and Garlic

The rules for potatoes are the same for onions and garlic. Even though you have to keep them away from potatoes, you can always put any type of onion and garlic together in a safe dark place.

Tomatoes

If you buy slightly underripe tomatoes, but them in a paper bag and store them in a cool, dark place until they fully ripen. Once they do, you can just leave them out on the counter, no fridge necessary!

More often than none, we go to the grocery store when we still have a pretty packed fridge. Although it may not look full to us, there is probably more in there than you think. In the US alone, each person on average throws away 1 pound of food per day, which means that we aren’t totally utilizing the food we have in our refrigerators and pantries. To combat this, try completely emptying your food spaces before going shopping.

Get Creative

Before you go to the store, look at your fridge and pantry and see what items you have to work with. Think about the fresh produce you have and see if any of them go together in a certain dish or cuisine. If you have trouble getting creative, type in the foods you have into the internet and something will definitely pop up.

Whole wheat noodles in coconut milk-peanut sauce by @yummyyatra ❤ . Loaded with vegetables, tossed in a homemade Indonesian sauce. For the peanut sauce 1 1⁄2 cups unsalted skinned peanuts 5tbsp. Coconut sugar 1 1⁄2 tsp. dried sriracha 3 cloves garlic, minced 1 serrano chili, stemmed and chopped finely 3⁄4 cup coconut milk 1 tbsp. cider vinegar Salt, to taste . Heat peanuts in a 12″ skillet over medium heat; cook, stirring, until toasted, about 7 minutes. Transfer to a food processor, let cool Process the peanuts until finely ground. Add sugar, garlic, and chile, process until it is a finely processed. Transfer this paste to skillet, stir in the coconut milk, sriracha Heat over medium heat, stirring often, until oil begins to separate from paste, 5 minutes. Stir in vinegar, salt to taste, and about 1/2- 3⁄4 cup water; simmer until it is of a soupy consistency, about 3 minutes. cool, set aside Noodles 1 lb linguine Cook noodles per package instructions, drain (reserve about a cup of the water) set the noodles aside Veggies prep Veggies (carrots, peppers, cabbage, green onions, broccoli) 2 tbsp olive Salt, to taste 2 cloves of garlic, minced Other ingredients (to be used in the end) Fresh cilantro Juice of 1 lime In a wide skillet, add olive oil, 2 cloves of garlic, sauté for 30 seconds. Add all the veggies, sprinkle some salt 2-3 tbsp water and cover and cook for 5-7 minutes on medium heat, stirring every 2 minutes in between). The veggies should be done but still have a crunch to them Once the veggies are done, transfer to a plate, set aside . To assemble the noodles Add cooked noodles to the veggies in the skillet, add the peanut sauce, a few spoons at a time, toss well. You may add more sauce if you like. If it appears too thick and creamy, add the reserved pasta/noodles water. Top with chopped cilantro, lime juice. Serve hot. #bestofvegan

Freeze

If you see that some vegetable or fruit is starting to go bad, freeze it! You can use it later to make infusions, stocks, and more, and will allow you to use that item in a new and innovative way.

Compost

Composting food is the best way to reduce waste because it gets turned it soil. If you can’t start a compost yourself, check out if there are any community gardens or neighbors that can use your compost.
